Apricot biscotti

Serves 20

100 g dried apricots
50 g dried dates
50 g dried strawberries
50 g almonds
50 g pistachios
50 g hazelnuts
1 lemon (zest only)
Preheat the oven to 150C
Chop the dried fruit and lemon zest finely
Blanche the almonds
Chop the nuts finely
250 g flour
250 g sugar
1.5 tsp baking powder
Mix the flour, sugar and baking powder
3 eggs
Add the eggs
Add the nuts and fruit
Roll into long sausages 5cm diameter
Put onto lined trays and flatten slightly
Cook for 10 minutes
Allow to cool a little
Slice diagonally with serrated knife
Cook for a further 10 minutes until golden
